Ben Smith started this large dairy farm in 1920, and developed it into a large-scale farm and milk production facility. In 2001, Smith Brothers was forced to move its 3000-head dairy herd from Kent and Snohomish farms to a more spacious location in Grant County, WA. In 2006, a change in federal law regulating milk prices for producer-bottlers, like Smith Brothers, made it unprofitable for them to maintain the cattle themselves. In late 2006, Smith Brothers began purchasing its raw milk from the Northwest Dairy Association, a farmer's co-op. It continued to pasteurize the raw milk in a traditional way, rather than switching to "ultra-pasteurization," a method of killing germs by heating the milk to high temperatures. Ultra-pasteurization enables milk to have a longer store shelf-life, but alters the product's flavor.
